Our last article was a level of vulnerability that was actually a little scary to put in print. A little scary and a little freeing so we’re leaning into that and letting you in on every step of this journey with us. We’ve moved one step up from having nothing and have the beginnings of a little something to share with you! Something still in the developmental phase. We’re hopeful you’ll enjoy it and feel more free to make it your own if you don’t have us bossing you like we have it all figured out. Haha
•3 overripe bananas
•½ cup vanilla Greek yogurt
•about 10 strawberries
•Whole bag dark chocolate; melted
Mush bananas flat on a cookie sheet lined with parchment paper. Spread yogurt over. Layer with sliced strawberries. Freeze until the top is frozen solid. Melt whole bag of dark chocolate and pour evenly over top. The chocolate will probably start to harden immediately. It’s a good idea to go ahead and cut into squares before returning to freezer. Keep frozen or refrigerate to soften a little before eating.
We stumbled upon this recipe and were ridiculously excited about sharing it with you as the perfect snack for the end of summer break and an after school snack idea! Can you believe it’s time to be thinking of after school snacks?! Let’s not get distracted by how fast time flies and stay focused on this recipe. This recipe that seemed sooo easy and delicious. Which, yeah maybe we immediately started to complicate it by wanting to add some kind of crust: pretzels? Graham crackers? Nilla wafers? Something! Our mom has said for years that it’s best to make a recipe as intended first before making any changes… we should have listened. Haha. Our first attempt had crushed pretzels as a crust and peanut butter added to the yogurt. It was NOT a success. Well, if at first you don’t succeed try doing it the way your mama told you or whatever that saying is. So, we followed the recipe. Which was actually just a video that gave the general idea but not exact amounts of anything except the bananas. We can now tell ya after making it that you really might as well melt the entire bag of chocolate chips to get a good coating over the whole top. We can also tell you that it’s not really that good. (Man, really wish we could use emojis so you could see the cringe, the slightly embarrassed, the laughing and even the little hopeful grin that maybe you’ll actually like it as is.) It’s not bad! Just not really good… in our opinion. If you like a little tartness in your sweet snacks you’d probably love it! If you’re a little more like us, and prefer your sweet snacks…well, sweet… maybe add some honey or maple syrup to the yogurt? Not sure how that’d freeze but it’s fun to find out. We had such a good laugh with our mom and brother who were brave and gracious enough to try it and keep eating to think of ways to make it better. Mom says the yogurt needs to be made less tart either by sweetening it up or maybe just adding less of it. Brother says we just consider them smoothie starters which we’re all excited to try! Just gonna add some milk and protein powder and blend! As much as we’d hoped this would be a good snack for kids— it’s too messy as is so there’s some figuring out to do in that aspect too.
