We are officially in the fall season now and thankfully Oklahoma seems to be agreeable and is giving beautiful fall temps for this first week of fall. With the change of seasons we see a change in the way we cook. Cooler temperatures mean we crave warm soups, stews, and comforting, filling foods. It also means football season is back in full swing. Game day food is a whole mood! Often game day food isn’t the healthiest of food options. Well, we have stumbled across a recipe for queso that has cottage cheese as the main ingredient. We know what you’re thinking. But give it a chance because this queso is legitimately delicious and made of real ingredients (I mean do we really know what is in velveeta?!) and gives loads of protein!! What more can you ask for?
We shall call this recipe “Queso” (heavy on the quotes).
“Queso”
•1lb ground beef (pork, turkey, chicken) seasoned, browned, and drained.
•16 oz cottage cheese
•1.5 Tbsp taco seasoning
•1-2 Tbsp water
•1/2 cup shredded cheese
•1 can rotel tomatoes, NOT drained
While cooking your meat, add the cottage cheese, taco seasoning, water, and shredded cheese to a blender. Summer uses her ninja beautifully for this.
Blend until completely smooth.
Add this creamy mixture into your cooked and drained meat.
Add in the can of rotel tomatoes.
Stir until all combined and warmed.
Enjoy this delicious, high protein game day food!
