OKSEASONED SISTERS TOMATO FETA PASTA

Tomato Feta Pasta

“Garden Eats-Food from the Garden” series continues with a great way to use your garden tomatoes. Full disclosure-We only have tried cherry tomatoes in this recipe. We use the big beefy tomatoes and Roma tomatoes for salsa,  hamburgers and marinara sauce! This recipe was found on TikTok about 3 years ago and has become a favorite at Summer’s house. She adds cooked, shredded chicken or seasoned beef or pork to make it a whole meal that her son especially enjoys! 

Tomato-Feta Pasta 

2 pints cherry tomatoes 

8 oz feta cheese

Herbs de Provence

Olive oil

Balsamic vinegar 

Bow tie pasta, half a package, cooked

Chicken, cooked & shredded or ground beef/pork, browned and seasoned (as little or as much as you want!)

Spray a baking dish (9×9…Summer got hers from an estate sale and it’s old and a little bigger than a standard 9×9 dish) with non-stick cooking spray. Wash and dry  your tomatoes and dump them into the baking dish. Create a space in the center of the dish for the feta cheese. Dump the 8 oz package of feta cheese in the center of 

the dish with the cherry tomatoes surrounding. Sprinkle the Herbs de Provence seasoning all over the top of the tomatoes and cheese, as desired. Drizzle olive oil over all as well. This is going to create the sauce so be generous. Finish with a little balsamic vinegar over all. Bake at 400*F for 30-40 minutes or until the cherries are tender and juicy and the cheese is browned. Mash the cherries and cheese all together to create the “sauce”. You have a lot of freedom with this recipe because you really can use as many tomatoes as you want. It all depends on how “saucy” or “cheesy” you like your tomato sauce to be. After you have combined the tomatoes and cheese, add in your cooked pasta and cooked meat, if desired. Bonus- add in heavy whipping cream and stir it all up to make a Creamy Tomato Feta Pasta! Yum!!
