If you thought Sparky’s was just a lunch spot, you might want to take another look. Things are cooking on Main Street in Hennessey, and Devin Brown has a whole lot more up his sleeve than a good sandwich.
Sparky’s Eatery & Market has a new home at 202 S. Main, a fresh menu, longer hours, and something entirely new for Hennessey: Sparky’s Fresh Market.
But before we get to all that, let’s talk about the guy behind the food.
Devin Brown has been in the restaurant business since he was 15. He’s worked just about every job there is, from the kitchen to management, and somewhere along the way, he figured out that food was more than just something he was good at. It was something he loved.
And if you’ve ever met Devin, you know he’s not exactly the quiet guy in the corner. He’s got a big personality, a quick sense of humor, and usually about a dozen things going on at once. Somehow, he still finds time to dream up his next creation.
Take The Yard Bird, for example.
Inspired by a white BBQ sauce he learned to make in Mississippi, Devin put his own spin on it with pimento cheese, fresh veggies, and a combination of flavors that earned the sandwich a feature in Oklahoma Today magazine. Not bad for a little sandwich from Hennessey, Oklahoma!
And he’s nowhere near finished experimenting.
Devin is always thinking about new sauces, spreads, menu ideas, and ways to bring something different to the table. His approach is pretty simple: make something good, make it your own, and see if people love it as much as you do.
Of course, Sparky’s isn’t a one-man show.
Business partner Lori Sparks is a big part of what makes the place tick. She’s the talent behind those award-winning cinnamon rolls and plenty of the homemade sweets that keep customers coming back. While Devin is busy cooking up his next idea, Lori helps keep everything running.
Now, with their new location, the two have even more room to do what they love.
The restaurant has expanded beyond lunch, with hours from 11 AM to 7 PM, Tuesday through Saturday. That means you can still grab your favorite midday meal, but now you’ve got a dinner option, too.
And then there’s the MARKET!
This might be one of the best additions for anyone who’s ever gotten home, opened the refrigerator, and thought, “Well, now what?”
Sparky’s Fresh Market offers ready-to-go meals, homemade dressings, and other goodies you can pick up and take home. Good food without having to do all the cooking yourself. Who’s going to complain about that?
Online ordering is another addition, making it easier to grab something when you’re short on time.
For Devin and Lori, the new location means more opportunities to get creative, try new things, and serve the community that’s supported them along the way.
And that’s really what Sparky’s is about.
It’s the familiar faces coming through the door, the conversations across the counter, the customers who become regulars, and the chance to make somebody’s day a little better with something delicious.
