Hooray! Finally, some much needed rain and cooler temperatures!! Hallelujah! Dare we say, “fallelujah” haha
Now that we’ve had a little taste of fall weather we just can’t get enough! We want some more! We want s’more! (Any other ‘Remember the Titans’ fans out there/chronic movie quoters? Just Autumn? Okay then…. Moving on) We’d like to have some s’mores too! These little s’more cups will ensure the proper graham cracker : chocolate : marshmallow ratio is consistent while also just being such a cute little bite sized treat.
Ingredients:
7 Graham crackers (a little over 1 cup once finely ground)*
¼ cup powdered sugar
6 TBSP butter; melted
4 (1.55oz aka full sized) chocolate candy bars; divided* (we used regular ol’ Hershey bars)
12 large marshmallows; cut in half*
***Note: this is a great family baking recipe because these preparations could be helper jobs and the whole process is easy enough they might stay interested from start to finish without overwhelming you. Everybody wins!
Directions:
Preheat oven to 350°F. Place graham crackers into a ziplock bag. Finely crush into crumbs. Combine graham crackers, powdered sugar and melted butter in small bowl. Spoon mixture into greased mini-muffin tin (about 2 TBSP in each). Press crumbs to form shallow cups. (Can be done by hand or back of scoop or with the sprayed bottom of another mini-muffin tin)
Bake 4-5 minutes or until edges are bubbling. Remove from oven ~ leave oven on) Place chocolate into each cup (original recipe calls for one rectangle piece of chocolate each. We used 1.5 or 2 to fit our preferred ratios) Press a marshmallow half (cut-side down) onto chocolate pieces in each cup. Return to oven for 1-2 minutes or until marshmallows have softened. Remove from oven ~ turn oven off. Cool in pan until you can easily touch the pan to carefully remove each cup. Cool completely. Melt remaining chocolate. Dip the top of each marshmallow in melted chocolate. Turn right-side up and allow chocolate to set.
Disclaimer: We did not have the time required for the extensive waiting and cooling so we spooned a dollop of and/or a drizzle of the melted chocolate onto the marshmallows while everything was cooling in the tin then put them in the fridge to expedite the process… still hardly waited long enough for them to be set and able to be scooped out before taste testing and were very pleased with how they turned out!
