Do you have any big plans for the 4th of July? Do your plans include cooking out and getting together with friends or family?! We have an oldie but goodie recipe that your kids can even help you throw together!
But first, Summer just got back from a trip to Italy with her daughter and while there she asked their tour guide what he thought of as “American food”. Because, you know, Americans have a general idea of what Italian food is or what Mexican food is, etc…but what do other countries think of when they think “American food”?! His answer was hamburgers, BBQ, or maybe even steak. So basically, what we cook when we celebrate big “America Celebrations”! Haha! Think about it, do you cook out hamburgers and hotdogs for Memorial Day or 4th of July! Maybe you smoke a pork butt and have pulled pork (this counts as “BBQ”!). Then you are eating “American Food” according to the rest of the world. Every good “American Food” cookout deserves a great dessert and that is what we are including today!
This flag cake has a sugar cookie “crust”. Feel free to use the rolled refrigerated cookie dough if you prefer for ease. This recipe uses one package of Betty Crocker sugar cookie mix. As a gluten free option, we suggest a pretzel crust but use gluten free pretzels!
Easy American Flag Cookie Cake
- 1 pkg Betty Crocker sugar cookie mix (make as directed on package, using 1 stick butter and 1 egg)
- 1 brick cream cheese, softened
- ⅓ c sugar
- 2 tsp vanilla
- Blueberries
- Raspberries
- Strawberries
Mix the sugar cookie mix as directed on the package and press into a thin layer on a cookie sheet. Bake @ 325*F for about 15 minutes, or until done. Don’t overbake. Allow to cool.
Mix the softened cream cheese, sugar, & vanilla with an electric mixer until very well combined and fluffy.
Once the cookie crust has cooled, spread the cream cheese “frosting” over the top of the cookie crust.
Wash and dry your berries, cut the strawberries into fourths, if desired, to help them lay better on the cake.
Arrange the berries on top of the frosted cookie cake in a flag formation with the blueberries acting as stars in the top left corner and the raspberries and strawberries alternating as red stripes to complete the flag.
