Have you, like us, tried out multiple recipes and methods for making a pot roast? Some are too bland, some are still too tough at the end of the cooking time. Well, hear us out…we have another recipe to offer you. But this one comes with a caveat. The length of time that your roast needs to cook is heavily influenced by the kind of cut and how big the roast is. Other factors come into play as well, including if this is a store-bought roast or a farm fresh one. Farm fresh tends to be leaner so you will need more cooking time…always on low.
This method is using a 3-5lb roast. Your choice of cut.
1 stick butter
1 pkt au jus gravy
1 pkt brown gravy
1 pkt onion soup mix
Yellow potatoes, cut up uniformly
Carrots (we prefer whole carrots – peeled and diced)
To begin, preheat a big skillet so you can sear your roast. We use a large cast iron skillet. Always preheat it so it sizzles as soon as the meat touches the skillet. Generously season your roast while searing it. We use salt, pepper, garlic powder, & onion powder. Sear all sides and then move it to a crockpot.
Add in the chopped potatoes and carrots (you can add onion here too if you like and garlic cloves.)
Place the stick of butter on top of the roast.
Add in the seasoning packets, sprinkling all around.
Pour in some water to reach about a third of the way up the roast. Be sure you pour it over the top to get the seasonings all wet.
Cover and cook on low until the meat falls apart when you stir it around with a fork.
This is the kicker! It may be hard to plan for when this will be ready so always err on the side of caution and allow extra time. The roast will only get better as it sits and you don’t want it to be tough from being undercooked.
The roast we cooked most recently was probably a 4-5 lb farm fresh chuck roast and needed about 10 hours on low before it was tender. But boy howdy was it so tender and juicy and flavorful! It is worth the patience!
Be warned, your roast is going to start smelling delicious and ready to eat in as little as 4ish hours but do not be deceived, haha! Let it cook until it is so tender that it falls apart.
It just might be the best roast recipe there is!
