Did you know that Sunday, February 23, 2025 is National Banana Bread Day? Apparently it is, so go find yourself some old bananas and make some delicious bread. If you never have made any beforeโฆyou just combine the ingredients and then bake. No kneading, waiting, proofing, rising. Just bake and consume. And youโre gonna want to consume. Banana bread is special ๐
Here is our favorite banana bread recipe and itโs from our Berkenbile Family cookbook.
โข3 c sugar
โข1 c butter (2 sticks, softened) โข4 eggsย
โข1 tsp vanilla extract
โข1 tsp almond extract
โข4-5 overripe bananas, mashed
โข3 c flour
โข1 tsp baking powder
โข1/2 tsp baking soda
โข8 Tbsp buttermilk
Combine the sugar and butter in a large mixer and mix until fully combined. Add in the eggs and mix well. Add in the vanilla and almond extracts and mix well. Then add in your mashed bananas and mix well. In a separate bowl, combine the flour and baking powder and mix them to combine. Add the flour mix into the well combined wet ingredients. In a small bowl, measure out your buttermilk and then add the baking soda and mix with a fork. It should foam up. Finally add the foamy buttermilk into the mix and combine well. Pour this into loaf pans that have been greased or sprayed with nonstick spray. This makes 3 loaves or 2 really big ones. If making 3, bake at 350 for about 45-50 minutes or until a toothpick comes out clean when poked into the center of the loaf. If making 2 really big loaves, you may need to increase the baking time.ย
