Fresh Peach Cobbler 

The end of the summer always has me thinking about the big ol boxes of fresh peaches that are the juiciest and most delicious treat that I can think of! We know that there are so many ways to enjoy those fresh peaches, but a homemade peach cobbler in a cast iron skillet is at the top of that list for me. The skinning and slicing of the peaches is the most time consuming but good things are worth it, right?! I have a yummy cobbler-shortcut recipe that I have shared that uses a cake mix as the shortcut; but this recipe comes from a favorite bed and breakfast cookbook that I purchased years ago and I like to follow it exactly. I have tried using olive oil instead of vegetable oil and cannot recommend that. 0 out of 10 on using the olive oil instead of vegetable oil! I do not like using highly processed oils in my foods as I know they are inflammatory..but I need to keep trying to find a good substitute. Until then, just limit how often you use it. 

Peach Cobbler in a skillet

8-10 fresh peaches 2 c sugar 

¼ c butter 2 tsp baking powder 

½ c brown sugar 1 tsp salt 

1 tsp cinnamon 2 eggs 

2 c flour 1 c oil 

Preheat oven to 350*F. Peel and slice 8-10 fresh peaches and spread in the bottom of a buttered cast iron skillet. (note: the cobbler topping is pretty thick, so I like to make sure my peach layering is substantial!) Slice ¼ c butter and scatter over the peaches. Mix together 1/2 c brown sugar and 1 tsp cinnamon and sprinkle this mixture over the top of the peaches and butter. In a medium bowl combine the flour, sugar, baking powder, and salt. In another bowl beat the 2 eggs with a fork until frothy and add the oil to the eggs, mixing well until combined. Add the wet ingredients to the dry ingredients and mix. Crumble this mixture all over the brown sugar-cinnamon topped peaches in the skillet. Bake at 350* for 45 minutes or until desired doneness. 

You guys, this is it. It is so good! Enjoy it fresh from the oven, piping hot with a scoop of vanilla ice cream..but also enjoy it later cold out of the fridge. It is good!
